Scallop blinis

Scallop blinis

For the blinis:
➡️1 plain yoghurt.
➡️1 glass of all-purpose flour.
➡️1 egg.

For the toppings:
➡️4 broccoli florets.
➡️4 broccoli florets.
➡️1 spoonful of truffle paste.
➡️Aceite extra virgin olive oil Picual, Green Emerald.
➡️Vieiras.
➡️Sal and pepper.

Elaboration:
Let's start with the blinis...
1. Mix all the ingredients together, whisk and fry in the pan in the form of small pancakes.
2. Cook for 1 to 2 minutes on each side and remove from heat on absorbent paper.
3. Remove the thick stems from the broccoli and cook it al dente.
4. Boil the potato in water or in the microwave, peel the potato while hot and mash it to form a kind of mash.
5. Add half of the truffle paste and a little salt and pepper.
6. Now, add EVOO to the pan to prepare the scallops.
7. On top of the blinis, add the potato with truffle, the broccoli stalks to the puree and the fried scallops.
8. Garnish with the tender shoots and Green Emerald.

In less than 5 minutes, you have super tasty and easy-to-prepare montaditos.

You will need:
➡️ Seed bread
➡️ Escarole
➡️ Carpaccio of veal
➡️ Parmesan
➡️ Organic Extra Virgin Olive Oil.

Steps to be taken:
1. Cut the bread into small slices, add the Emerald Green and toast in the oven.
2. Wash the endive well and cut into small florets and season lightly with salt and pepper.
3. Place the endive on the bread and add a few slices of veal carpaccio.
4. Add Parmesan, salt and pepper flakes and a few drops of Organic Extra Virgin Olive Oil.

Brie and caramelised onion puff pastry ????

You need:
➡️1 puff pastry sheet
➡️1 brie wedge
➡️1 handful of assorted nuts and dried fruit
➡️½ onion

Steps to be taken:
Cut the puff pastry into rectangles of about 5cm by 3cm and bake in the oven with a tray on top to make the bases.
2. Cut the onion into julienne strips and caramelise over a low heat.
3. Cut the brie cheese to the same size as the puff pastry bases.
4. Place the cheese on the puff pastry and the caramelised onion on top.
5. Decorate with a few broken nuts and a string of Emerald Green.
