The olives destined for the "Premium Edition" are harvested and milled during the remaining six nights of the harvest. This edition is presented in a 500ml blue sapphire-cut emerald bottle. It contains organic extra virgin olive oil of the Picual variety. Organic Picual oil, like conventional Picual oil, has a strong personality. These oils are greener in color, with a very intense fruity flavor, a greater sensation of density, and medium spiciness and bitterness. This variety is highly prized for its early production, ease of cultivation, and the quality of the olive oil it yields, which is distinguished by its high oleic acid content. Its sensory profile can be defined as very intense green olive fruity, and very complex, with notes of fig tree, grass, stem, alloza, citrus and tomato plant. On the palate, it is sweet on entry, moderately bitter and slightly more spicy, all very balanced.
